The key to making crispy pork belly is in the preparation. The pork belly is first marinated in a mixture of fish sauce, oyster sauce, sugar, and other seasonings. Sometimes soy sauce is also used. It is then cooked in boiling water for several hours until it is tender and the fat has rendered out. The pork is then allowed to cool and is sliced into pieces. Ingredients
For the pork belly
- 500 g Pork Belly
- 2 tbsp Fish Sauce
- 1 tsp White Pepper
- 1 tbsp Oyster Sauce
- 1 tsp Sugar
- 4 tbsp Plain Flour
- Oil to cook
Dipping Sauce
- 2 tbsp Fish Sauce
- 1 Lime Juiced
- 2 tsp Chilli Flakes
- 1 Spring Onion Sliced
- 1 tbsp Corriander, chopped
Instructions
Dipping Sauce
- Simply mix all of the ingredients together in a small bowl. Adjustments can be made to all of the ingredients according to your taste.2 tbsp Fish Sauce, 1 Lime Juiced, 2 tsp Chilli Flakes, 1 Spring Onion Sliced, 1 tbsp Corriander, chopped
Crispy Pork Belly
- In a bowl, mix the fish sauce, oyster sauce, sugar and pepper before rubbing this marinade all over the pork belly slices and leave for aboout 30 minutes.500 g Pork Belly, 2 tbsp Fish Sauce, 1 tsp White Pepper, 1 tbsp Oyster Sauce, 1 tsp Sugar, 4 tbsp Plain Flour
- In a frying pan cook the pork belly for around 8 minutes or soOil to cook
- When cooked, simply cut the pork into bit size pieces. I served this with sticky rice.
