Sausage and broccoli carbonara
Mid-week madness has hit! Hence the sausage and broccoli carbonara recipe. The middle boy has school play rehearsal and the little lady has brownies.
Needing something quick to make for dinner, this seemed the obvious choice.
It took less than half an hour from start to finish and only cost just over £2.00 to make 4 large servings.

Ingredients
Sausage and broccoli carbonara
- 8 Chipolatas, with meat squeezed out and rolled into little balls (£1.25)
- 3 Eggs (50p)
- 50 g Parmesan, grated (50p)
- 250 g Spaghetti, approx (20p)
- 1 Head of Broccoli, chopped into indivual bits (25p)
- 2 Cloves of garlic, crushed (5p)

Instructions
Sausage and broccoli carbonara
- Having got the little lady ready in her uniform and packed her off when her mate's mum came to collect her. I fended off the now starving boys and headed into the kitchen. I started by frying the little sausage meatballs in a little oil in the wok for about 8 minutes or so, I also mixed the eggs and most of the cheese in a jug and seasoned.
- Then I cooked the spaghetti according to the pack instructions but added the broccoli to the spaghetti with about 3 or 4 minutes to go.
- I then chucked the garlic in with the sausages and cooked for another couple of minutes and removed it from the heat.
- After draining the spaghetti and broccoli (but retaining the cooking water and saving in case needed later) I chucked them in with the sausage meat and mixed them up. I then poured the egg mixture over and tossed it all together. Basically, the heat from the pan cooks it through. If the sauce is too thick just add a little of the cooking water. Once on served (whilst plating a spare for the brownie girl), I shared the remaining cheese over.
- The boys and I finished eating in time for me to wash up and then grabbing the car keys I went to collect the princess and her mates from brownies and taxi them all home. This dish was simple, cheap and quick. Although could be even cheaper with different sausages or you could even use cheddar rather than Parmesan. You could use any veg as well so look for all those special offers.And now I may have to have a sneaky glass of red and enjoy the silence…..
