Orange and Ginger Glazed Carrots

If you want to jazz up you Sunday roast then check out these amazing and simple orange and ginger glazed carrots. This time I used some sweet baby carrots because they were on a yellow sticker and cheap. But you can use any variety of carrot for this recipe. I am always looking at ways to get the kids happily eating more vegetables and this recipe didn't fail. It added a delicate extra flavour to the plate and all three of them asked for more. If you don't like ginger, you could always experiment with other flavours. We have cooked similar but used honey instead. I also plan to try to experiment with garlic in the future.

Ingredients
  

Orange and ginger glazed carrots

  • 900 g Baby Carrots
  • 50 g Butter
  • 25 g Ginger
  • 2 tbsp Clear Honey
  • Zest of 1 Orange

Instructions
 

  • Orange and Ginger Glazed Carrots
  • Bring a pan of water to the boil and then simmer the carrots for about 5 minutes

  • Using a frying pan, melt the butter and then chuck in the carrots, honey, ginger and orange zest and cook for about 25 minutes, turning every now and again.
