Thai Green Curry Recipe

We love Thai food. The aromas, the fresh spices and most of all the flavours. So when Mae Jum got in touch asking if we wanted to try some of their spice mixes, I didn’t hesitate to say yes! Within a couple of days, a beautifully packed box of six different Thai Curry pastes arrived through my letterbox.

Jatuporn or Jum as she is known by friends and family was born in a small market town in the south of Thailand. She moved to the UK to raise her family. As they started to fly the nest, she decided the nicest gift a mum (Mae in Thai) could give, would be to share the secrets to the recipes they grew up enjoying. The Mae Jum journey had started. This is the recipe for a Prawn Green Curry using one of the Mae Jum spice mixes. We have also tried the Massaman Curry, which was equally as delicious. So make sure you head over to my social media to see pictures of that too.

Thai green curry is a house favourite and is so easy to make at home. If you don’t fancy prawns, simply substitute them for pork, chicken or seasonal vegetables if you are vegetarian.

Ingredients

Thai Green Curry Recipe

  • 600 g Prawns
  • 70 g Mae Jum Green Curry Paste
  • 400 g Coconut milk
  • 1 Large onion
  • 200 g Mangetout
  • Rice to serve

Instructions

Thai Green Curry Recipe

  • Heat some oil in a pan and fry the curry paste for a couple of minutes, before adding about 200g of the coconut milk. Bring to the boil and then let it simmer for about 5 minutes.
  • Add the remainder of the coconut milk, while simmering for a few more minutes before adding the vegetables. Let it cook for about 10 minutes or until the veg is soft and cooked through. If you are using chicken or pork, you would need to add this before you add the remainder of the milk. Cook them through and then add the coconut milk.
  • Because I was using cooked prawns, I added them at the end as they only needed warming through. If you have fresh prawns, make sure they are cooked before serving. We had our Thai Green Curry with rice, however, it would work well with
flatbreads too.If you like this recipe don't forget to follow me on

We eat a lot of Asian food and this Sticky Pork with an Asian Slaw didn't disappoint. It was really quick to prepare and cook and even though I needed to pay full price for the pork steaks because there was nothing in the yellow sticker section, it still came in at under a fiver for all of us.

This chorizo and pea risotto recipe is the perfect midweek meal for a busy family. It only takes a few minutes to prepare and 30 minutes to cook. The kids love it and always ask for a second helping. It is versatile too. If you don't have any chorizo, replace it with some bacon or perhaps some leftover chicken from your Sunday Roast. I always like to make recipes quick and easy. With only three steps and 30 minutes of cooking, this fits the bill well. Give it a go and let me know what you think.

We love homemade sushi, not only is it delicious, with a bit of practice it is fairly easy to make. It is also a great way to get the kids involved in the kitchen with the rolling process. I was pleasantly surprised to find a piece of Scottish Salmon in the yellow sticker section of my local supermarket recently. Before deciding on Sushi I browsed the internet for other Salmon recipes. While browsing I stumbled on
The Fishermens Mission. For those like me who didn't know what they do, please head over and check out their website and support them where you can. The Fishermen’s Mission is the only fishermen’s charity that provides emergency support alongside practical, financial, spiritual and emotional care. We help all fishermen, active or retired, and their families.More than 13,000 people work in fishing: the UK’s toughest and most dangerous peacetime occupation. At sea, they face death and injury with an average of 15 fishermen killed or seriously injured every year.On land, many struggle with insecurity and debt. And for the 50,000 retired fishermen andtheir families, the fishing may have ended but the hardship continues as they face debt, scant savings, loneliness and isolation.Arguably, without
The Fishermens Mission and the amazing work they do, we wouldn't have the vast and delicious range of fish products available to us at the supermarket or fishmongers. So, please head over to their site and support them if you can.

Chicken Kebab - Greek Style Shish Kebab. This has been, by far the best of a great bunch of new recipes. The kids love it, I love it and who would have known it was so easy to make. We have cooked in the oven and on the
