5 easy midweek meals. Family life seems to take over rather quickly. We never seem to have enough time. I’m either running about after the kids or helping them out with homework. You all know that I try to avoid processed food. I would rather cook from scratch and that way I know what we are eating. Plus, it is a lot cheaper.

Midweek meals can be a bit of a faff! So I thought I would compile a list of 5 easy midweek meals for families.

A midweek meal needs to not only be delicious and affordable. It needs to be quick and easy to prepare and cook. Most parents, myself included, don’t have time to be in the kitchen for hours on end every night.

The following is 5 of our go-to meals, that fit the remit of this post perfectly. Quick, delicious and don’t take forever to cook.

Chicken Kebab, just like the takeaway

Number one on the list is a house favourite. It does take around an hour to cook, but the prep work is super simple and once it is in the oven, you don’t need to do anything. This gives you plenty of time to help the kids or perhaps grab some you time, with a good book.

If you are a fan of Shish Kebab takeaway, then you are in for a real treat. This Kebab recipe is a delicious Greek Style Kebab, just like the kebab shop down the road. Only a lot healthier! Once prepped it can be left either overnight or for a few hours in the fridge.

Easy peasy sticky ribs

Up next are these amazing BBQ ribs. Like the previous recipe, they take no time to prepare and most of the work is done in the oven, without the need to keep checking on them. My kids love ribs and what better way to get sticky fingers than diving into a big bowl of fresh BBQ meaty ribs.

 

One-Pot Chicken Curry

What’s not to love about a cheeky midweek curry. This one-pot recipe is really easy to make and you can even use left-over chicken from the Sunday roast! Serve it with either rice, naan bread, homemade flatbread or poppadoms. It is a really versatile dish and most meats could be used. Get your authentic takeaway flavours at a fraction of the price.

 

Chicken Wings

Coming in at number four is this tasty chicken wing recipe. Two or three minute prep time and only half an hour to cook! What’s not to like about that? The kids are constantly asking for this meal again, so it was certainly a winner in our house. Or, perhaps……

Pork with Asian Slaw – Easy midweek meals

To end the list and number five on the 5 easy midweek meals is this delicious sticky pork with Asian slaw. It may sound complicated, but only a 15 minute cook time, makes for the perfect midweek easy meals list. Simple ingredients, easy cooking and amazing flavours. Perfect midweek family meal!
