Taking only ten minutes from start to finish the easy pasta and meatballs recipe is a family favourite.
Made from just a few store cupboard ingredients, it comes together in just a few minutes. The kids love this meal and often request it, which suits me fine. Especially on the nights, we are rushing around together to fit in all the out-of-school activities that fill our diaries.

I was lucky and found some shop-bought meatballs in the yellow sticker section, so I decided to use them for this easy pasta and meatball recipe. However, should you want to make your own, it is fairly straightforward. Mix some beef mince, breadcrumbs and seasoning together with an egg and using your hands pat them into small ball shapes. It should only take a few minutes longer.

Ingredients
Summer spaghetti meatballs
- 500 g Pork Mince
- 2 Onion, finely chopped
- 2 Garlic Cloves, crushed
- Big Handful Parsley (leaves chopped and stalks finely chopped)
- 2 Courgettes (peeled around the edge, centre grated or finely chopped)
- 300 g Spaghetti (or enough for your family)
- 1 Lemon (zested and juiced)
- Grated Parmesan to serve
Instructions
Spaghetti meatballs -
- I promised quick and easy so here goes…….After heating some oil in a frying pan over a medium heat I added the onions to soften for a few minutes and then the garlic. A couple of minutes later I put them into a bowl, to which I also added the pork mince, parsley stalks and grated courgette. I then seasoned, mixed and shaped them into meatballs. I then carefully put the meatballs into the frying pan and cook for 8-10 minutes, turning occasionally.500 g Pork Mince, 2 Onion, finely chopped, 2 Garlic Cloves, crushed, 1 Lemon (zested and juiced), 2 Courgettes (peeled around the edge, centre grated or finely chopped)
- Bringing a pan of water to the boil I cooked the spaghetti, as soon as it was almost cooked I used tongs to transfer the spaghetti to the pan of meatballs, ensuring I sloshed lots of the pasta water into the frying pan too. I added the lemon juice and courgette peels and tossed it all together. Finally serving with the lemon zest, parsley leaves and parmesan.Big Handful Parsley (leaves chopped and stalks finely chopped), 300 g Spaghetti (or enough for your family), 1 Lemon (zested and juiced), Grated Parmesan to serve
