Easy vegan recipes for anyone planning on trying some delicious plant-based meals.
While we are not Vegan and don’t lead a vegan lifestyle, we do attempt to go plant-based at least once a week. Mainly to mix up our taste buds a little and enjoy some full of flavour and fresh seasonal produce. With this in mind, I thought I would share some of our favourite easy vegan recipes.
A simple search on the internet will show many benefits of becoming vegan, however, we as a family are not ready to commit full time, so for now, we enjoy the odd plant-based meal.
To be honest it isn’t that difficult either. There are many foods already in your cupboard, that happen to be vegan. Most bread, marmite, rice, pasta, coconut milk, curry pastes, crisps, baked beans and jam to name a few. So there is a pretty good chance that some of your meals are already vegan.
A lot of the time it is really easy to remove meat and add more veggies to a recipe to make it solely plant-based. We do this a lot with South East Asian food, such as Thai curries.
Over the years we have tried and tested some amazing vibrant, veggie-powered vegan recipes and I felt it was about time to share some of our favourites.
Some of these can be found over at the food part of the blog already and some are tasty dishes we have found online. You don’t need to be a chef, these recipes are quick and simple for anyone to try.
Vegan Recipes for Busy Families
So without further ado and in no particular order, let’s learn how to make some tasty vegan meals.
When looking for easy vegan recipes, where better to start than the Veganuary website! With over 500 recipes to choose from, there is plenty of nutritious meals to attempt. One of our favourites is the Vegan Meatballs with Apple Sauce. It is quick to prepare and cook and the kids love the flavours. Plus, as an added bonus, the ingredients are easy to find at most supermarkets.
Next up is our new go-to dip. This red pepper dip is perfect for school lunches, picnics or as a healthy snack. It has a sweet smoky flavour and can be used with almost anything.
Nutritious and delicious
We tend to eat a lot of pasta. It is quick to cook and perfect for a mid-week meal amongst the chaos of family life. Pesto sauces are always easy to reach for and so simple to cook with. However, have you ever made your own? This recipe is not only nutritious and delicious, but it is also plant-based too.
Another quick and tasty win for lunch is this Vegan Egg Mayo sandwich. This comes straight from the award-winning restaurant, Stem and Glory’s summer menu and was introduced to me by Louise Palmer Masterton, the founder of the restaurant chain.
Easy Vegan recipes for breakfast and lunch
BLT, Bacon, lettuce and tomato! Always a popular choice in our house. So a list of our favourite easy vegan recipes wouldn’t be complete without a plant-based version of it.
One of the kid’s favourite lunches is fresh from Jamie Oliver’s website. Sticky miso peppers. It is really easy to make and source the ingredients and can be upscaled to make for dinner.
Another popular choice in our house is these amazing Vegan Sausage Rolls. Packed with mushrooms and pinto beans, these plant-based sausage rolls will give your protein intake a boost and fill a hole.
Fruity Toots, again from the Olive Magazine website are full of natural sweetness and made up of dates, raisins, nuts and dried apricots. Mixed together with seeds and apple juice. Perfect for a little sweet snack.
With so many choices available we have found it really easy to eat some nutritious and delicious plant-based meals. Finding these easy vegan recipes has been a great way for the kids and me to learn more about nutrition and improve our diets.

I’m far from a vegan. But I never realised how many vegan meals I actually cook, for myself anyway.
