Technically not a bake off! But the middle boy asked me to buy the ingredients for a lemon drizzle cake for him to make. We have a kiddie friendly cook book called The little dish family cookbook and he found the recipe there. So after work I popped into the supermarket to pick up a lemon and some ground almonds. Literally as soon as we were back from school he made a start. I kinda left him too it, stopping by every now and again to take pictures…

  • He didn’t want to type so I will try and recreate it how he told me! He put the oven on 180 and greased a loaf tin with butter on a bit of kitchen towel. He then (judging by the mess) literally chucked the butter and sugar into a bowl and mixed with a hand mixer, one by one he mixed the eggs in (one by one apparently is really important, but he didn’t know why), he then zested (he said grated with this funny tool) the lemon and added that to the bowl, oh and the juice (suddenly remembered). After a big mix he said he mixed in the flour and almonds and finally (with a sigh and a breath) the water was mixed in. He plonked it in the loaf tin (and the floor, walls and ceiling) and chucked in oven for 45 minutes. As soon as it was cooked he poured the icing over it in the tin and left it to chill (his word again) first in the tin and once cooked a bit on a rack. He was a little upset that it was burnt around the edge, however I have just discovered you can get tin liners so that will cure that next time… Ingredients:- 175g unsalted butter at room temperature, 100g castor sugar, 3 eggs, zest and juice of 1 lemon, 200g self-raising flour, 30g ground almonds, 1 tbsp boiling water. For the icing :- 6 tbsp icing sugar, 2 tbsp lemon juice. The cake was amazing ! So we are all super proud of him… For his first attempt at baking a cake single handed he did an amazing job….. I have officially put in a request for some carrot cake next! Now to clean up the mess!!!
