Thursdays are always a logistical nightmare between school finishing and bedtime. School play rehearsals for the middle one, a trip to the ice cream shop and park with the princess before going back to school to collect the boy. We then head home and tend to find the eldest boy sat on the doorstep because he ‘can’t find (lost) his key. It’s then a quick change and head back to the park for football training. I tend to dump the middle boy there and head straight home (avoiding the play section of the park). However, this only leaves about half an hour to cook and feed the other (starving) two and me, whilst plating up for the other boy, before me and princess need to go back and collect him. So tonight I thought I would try something new;

Spaghetti Recipe
 250 g Cooked Prawns
 2 Lemons
 1 Handfull Dil
 4 tbsp Olive Oil
 1 Red Chilli
 1 Hanful of Cherry Tomatoes
 Feta Cheese (small bit)
 250 g Spaghetti (ish)

Spaghetti Recipe with prawns, feta, tomato and dill. Or as one of the kids called it warm spaghetti salad.

First things first, start by cooking the spaghetti following the instructions on the pack.

I chopped the tomatoes into small pieces but discarded all the inside bits and seeds and added them to a bowl. Next I added the prawns, some crumbled feta, the olive oil, chopped dill, the chopped red chilli and the juice from both lemons to the same bowl.

Actually I added half to one bowl with the chilli and half to another bowl without chilli.

3

I drained the cooked spaghetti and placed a pile of it onto each plate.

Then I added the prawn mixture to each plate of spaghetti (me and middle boy with chilli and the other two without). Using two forks, I tossed the spaghetti and prawn mixture together ready to serve.

So, 4 plates of food all prepared and cooked within 10 minutes.

It was a 50/50 split when asked if they enjoyed it. The Eldest and princess didn’t like it (although eldest cleared his plate), whilst myself and the middle dude loved it.

I response to what they didn’t like the princess looked at the floor and pretended she couldn’t hear me, whilst the eldest said ‘the green bits’, to which my daughter quickly concurred.

  1. This looks like a great quick and simple meal to whip up. I know my husband and I would love it, but the boy might revolt since he hates shrimp. But if I added different meat for him I’m sure he would love it.
