Simple summer prawns recipe for one
So, with the kids off to their Mum's for a few days, it was time for this dad to let his hair down. Sadly not this week though. Work, housework and other stuff to catch up on…… I knew before I left for work, that I was going to be late home, so rummaged through the freezer and stumbled on some prawns I brought when on a yellow sticker at the supermarket, so got them out to defrost and trotted off to work. Simple summer prawns it was going to be.

The trick is making the tempeh bacon super thin and super crispy and having just the right amount of mayo to make it sing!

The kids love sticky ribs and these didn't disappoint. I was fortunate enough to find two packs in the yellow sticker section of the supermarket for £1.87 each. Originally I planned to do an Asian style meal with them but changed my mind at the last minute. This easy sticky BBQ ribs recipe only took about 5 minutes to prepare and was very easy to cook.

I am really pleased that the yellow sticker section in my local supermarket has started to get used again and this week I managed to grab some lovely pork chops for £2.71 for 6. So, I kept 4 out for dinner and chucked a couple in the freezer for another day. After seeing a couple of Asian inspired pork recipes over the last month, I adapted them to suit my budget and our tastes. I hope you all enjoy this easy pork chop recipe as much as we have.

I saw something similar to this smoked salmon pasta on TV earlier in the year, so when I saw a half-side of salmon in the yellow sticker section for £3.78, I thought I would try my take on it.
It is another really easy recipe and is perfect for a mid-week meal as it takes less than 15 minutes from start to finish.

So I grabbed them out before bed last night to allow them to defrost. Not only was this recipe delicious and full of colour, but It also only took 10/15 minutes to prepare and only 15 minutes to cook.
Pork Fillet With Roasted Vegetables
This one-pot pork fillet with roasted vegetables recipe makes for a simple and cheap Sunday Roast. But being so easy and quick to prepare and cook it would also work for a delicious mid-week meal.
