Simple summer prawns for one

So, with the kids off to their Mums for the weekend, it was time for this dad to let his hair down. Sadly not this weekend. Work, housework and other stuff to catch up on……

Ingredients (following a quick freezer and fridge search for suitable bits), Fresh Prawns, Dill, Fine Green Beans, Butter, Baby New Potatoes, Red Chili, Spinach, Olive Oil, Garlic

I knew before I left for work, that I was going to be late so rummaged through the freezer and stumbled on some prawns I brought when on a yellow sticker at the supermarket, so got them out to defrost and trotted off to work.

After a manic day at work this needed to be simple. Firstly I boiled the potatoes for about 10 minutes, Drained and mixed with some dill and olive oil.

Next, I chucked some butter and garlic into a wok, chopped a couple of green beans and chucked them in, sliced a chili and in that went, finally the prawns followed. Fried for a few minutes, plonking some basil leaves in just before serving.

15 minutes, a quick rummage in the fridge and freezer and a yummy little dinner for one.
