This could also be used as a snack, salad, side dish or part of a selection of snacks. I managed to pick up all the vegetables for less than £1 because they were going out of date today and were reduced in the yellow sticker section. 

However, even at full price, it would still be less than £2 all in!

Ingredients

  • 200 g fine green beans, trimmed
  • 250 g spinach

For the sauce

  • 4 tbsp toasted seasame seeds
  • 1 tbsp soy sauce
  • 1 tbsp caster sugar
  • 1 tbsp white miso
  • 1 tbsp mirin

  • It can be difficult getting the kids to eat vegetables, but with this recipe, they will clear their plates every time. Firstly you need to bring a pan of salted water to a boil and prepare a bowl of iced water ready.
  • I chucked the beans into the boiling water for about 2 minutes. Then using a spoon with holes I removed them straight into the ice water. Next, I did the same with the spinach. As soon as the veg had colder I poured them into a colander to drain the excess water.
    200 g fine green beans, trimmed, 250 g spinach
  • To make the sauce/dressing I firstly grind the sesame seeds with a pestle and mortar (if you don’t have a pestle and mortar you could improvise with either a rolling pin or the side of a large knife and chopping board). I then chucked the rest of the sauce ingredients in with the sesame seeds and mixed them together.
    4 tbsp toasted seasame seeds, 1 tbsp soy sauce, 1 tbsp caster sugar, 1 tbsp white miso, 1 tbsp mirin
  • Finally, I tossed the veg with the sauce and served it as a side to the main dish. This could also be used as a snack, salad, part of a picnic or part of a selection of snacks…. happy days!
