Chorizo tomato and rocket pasta
This recipe for Chorizo tomato and rocket pasta salad is perfect for a mid-week meal. It takes less than 15 minutes to prepare and cook Plus it costs less than £5.00 to make.
Using just a handful of ingredients like chorizo, pasta, cherry tomatoes, rocket and mozzarella. It works well in the summer and it is a delicious way to end a busy day. The flavours work well together and the slight kick from the chorizo finishes it off well.

Ingredients
Chorizo Pasta
- 250 g Linguine Pasta - 30p
- Chorizo - £2.00
- 200 g Cherry Tomatoes, Chopped - 40p
- 1 Packet Baby Rocket Leaves - 74p
- 1 Mozzarella, ripped into bite sized bits - 47p
Dressing - approx 30p
- 1 Clove Garlic, Crushed
- 2 tbsp Olive Oil
- 2 tbsp Lemon Juice

Instructions
Chorizo pasta
- Due to the nice weather dinner was running late, so making a start, I took the outer coating from the chorizo and sliced thinly half of it and chopped the other half. I chopped the tomatoes and ripped up the mozzarella. Chucking each thing into a separate little pot.
- I then made the dressing by mixing all three ingredients in a small jug and put to the side.
- I chucked the pasta into a pan of boiling after and cooked it for about 10/11 minutes, whilst this was cooking away. I fried the chorizo for about 3 minutes until it started to change colour slightly. Using a colander and bowl I separated the chorizo oil and chorizo, I chorizo onto some paper towels.
- Finally, I chucked the pasta, dressing, chorizo and tomato into a large bowl and tossed them together before serving with the mozzarella and a drizzle of the chorizo oil over.
