This another amazing recipe from the recipe book from The Diary Diary team.

I already had some salmon in the freezer following spotting some in the yellow sticker section of the supermarket last time I was there. So I grabbed them out before bed last night to allow them to defrost.

Not only was this recipe delicious and full of colour, but It also only took 10/15 minutes to prepare and only 15 minutes to cook.

Chorizo pasta - I had already decided not to tell the kids that this had the word salad in the title, as far as the angels were concerned we we having spaghetti with chorizo. This was the perfect dish for tonight, fairly light to eat and super quick to prepare and cook, meaning more time to play games with the princess.

Hawaiian Chicken Wings - This is another fabulous dish that would also work on the BBQ. Or could be pre cooked and taken on a picnic or trip to the park. It is really quick and really easy to prepare and make. Huli Huli Chicken wings originate from Hawaii and as it turns out are amazing.

A little bit of pointless knowledge for you. 'Huli' means turn in Hawaiian and is a reference to an either motorised or manual turning of the grill during cooking.

With it being the school holidays we spent the day exploring the South Downs. Muddy paths, giant mud puddles and chalk cliffs. With the kids taking it in turns showering, changing and generally winding down, I needed something quick and filling.
