Dad's Got This | Parenting the (in)correct way

My favourite dish from my local Indian Take away is a Jalfrezi. I have always wanted to make it. So with the kids at their Mums for the weekend, tonight was the night.

On my way home from work I picked up all the required ingredients and even got lucky and found a pack of fresh prawns in the yellow sticker section reduced down to £1.20. So Prawn Jalfrezi it was.

This easy prawn jalfrezi recipe could easily be upscaled for more people by slightly tweaking the ingredients.

I have been wanting to try tofu for ages now. Then I got thinking about going the whole hog and make a tofu dish, but ensuring it was vegan too. Nothing like jumping in the deep end! As it turns out it wasn't to difficult, it was created with good reviews too.

Going back to the 80's today with this one and using soft cheese with herbs for this delicious bacon and chicken roll. Well under a fiver with yellow sticker chicken breast.

Chicken wrapped in pancetta with a garlic and herb centre, on a bed of pureed potato with a chicken jus, served with honey glazed puree carrots. OR, as it's known in my house; chicken wrapped in bacon with mash potato, chicken gravy and mashed carrots.

I need quick and simple for tonights dinner, we had loads going on and lot's of homework to catch up on. This dish certainly didn't fail us. Simple and bursting with Mediterranean flavours.

When the lunch box's come back from school just as full as when the arrived at school in the morning, you know its time for a change. They all love the shop bought Scotch Eggs, so I thought I would save some money and give it a go making them.
