One pot chicken and vegetables
Sometimes as a busy family unit, you need something quick and easy for dinner. This one pot chicken and vegetables recipe doesn’t fail.
Use just a few ingredients that can be changed to anything already in your fridge. You simply cook on a roasting tray in the oven.

Chicken with olives and tomatoes

Ingredients
- 1 Sprig of rosemary (from garden), chopped
- 1 Onion
- 2 Cloves of garlic
- 500 g Small potato, quartered
- 8 Chicken drumsticks or thighs
- 500 g Cherry tomato
- 300 ml Chicken stock
- 150 g Black olives
- Small bunch basil leaves
Instructions
- I simply chucked the first four ingredients into a roasting dish and plonked it in a pre-heated (200-degree) oven. I then fried the chicken in a small amount of oil, until it was browned and almost cooked through and then added it to the tray, with the stock, tomatoes and olives for the last ten minutes of cooking.
- Once cooked I scattered with basil and served.
- It really doesn't get much easier than this. Leaving me more time with the kids.
