Easy Chicken Satay with sticky rice and cucumber salad
Sometimes you need something quick and easy for your mid-week meals and this Chicken Satay recipe fits the bill well. Served with sticky rice and a cucumber salad, turns a traditional snack into an evening meal rather nicely.
Being unusually organised, I remembered to get the chicken breast out of the freezer in the morning, allowing them to be thoroughly defrosted by early evening.
It may appear to be a large list of ingredients. However a lot of it you may already have in the cupboard. It came in at just over £5 but did make enough for my lunch the next day.

Vegan ‘Quiche’
Makes 8 large slices
This is a staple in our house. It’s very tasty straight from the oven and works fab cold in a picnic with some pickle.
By all means, make your own pastry, but there are very good vegan pre-made shortcrust in every supermarket.

This has been on our menu at Stem & Glory Cambridge for years and it’s an absolute winner.
The trick is making the tempeh bacon super thin and super crispy and having just the right amount of mayo to make it sing!
Sticky Pork with Asian Slaw
We eat a lot of Asian food and this Sticky Pork with an Asian Slaw didn't disappoint. It was really quick to prepare and cook and even though I needed to pay full price for the pork steaks because there was nothing in the yellow sticker section, it still came in at under a fiver for all of us.

The kids love sticky ribs and these didn't disappoint. I was fortunate enough to find two packs in the yellow sticker section of the supermarket for £1.87 each.
