There is something nice about a piece of pork fillet. It always seems to look lovely on the plate, but it also cooks fairly quickly. This results in a delicious roast dinner, that the kids love and with very little effort or time.

The middle boy found this recipe online and asked me to try it. I needed to make some adjustments to make it work with the herbs and spices we had in the cupboard. It turned out amazing and will be back on the dinner table again at some point in the near future.

Chorizo pasta - I had already decided not to tell the kids that this had the word salad in the title, as far as the angels were concerned we we having spaghetti with chorizo. This was the perfect dish for tonight, fairly light to eat and super quick to prepare and cook, meaning more time to play games with the princess.

Hawaiian Chicken Wings - This is another fabulous dish that would also work on the BBQ. Or could be pre cooked and taken on a picnic or trip to the park. It is really quick and really easy to prepare and make. Huli Huli Chicken wings originate from Hawaii and as it turns out are amazing.

A little bit of pointless knowledge for you. 'Huli' means turn in Hawaiian and is a reference to an either motorised or manual turning of the grill during cooking.

Mango Chicken Bake. This was a really simple one pot dish from the BBC good food magazine and a bit of a crowd pleaser too. Except for the little lady, who was in a ‘I only like cereal mood’, although she reluctantly ate it all very quickly and asked for more of the fruity chicken, whilst saying it wasn’t good because it wasn’t cereal.
