Spaghetti meatballs -
I promised quick and easy so here goes…….After heating some oil in a frying pan over a medium heat I added the onions to soften for a few minutes and then the garlic. A couple of minutes later I put them into a bowl, to which I also added the pork mince, parsley stalks and grated courgette. I then seasoned, mixed and shaped them into meatballs. I then carefully put the meatballs into the frying pan and cook for 8-10 minutes, turning occasionally.
500 g Pork Mince, 2 Onion, finely chopped, 2 Garlic Cloves, crushed, 1 Lemon (zested and juiced), 2 Courgettes (peeled around the edge, centre grated or finely chopped)
Bringing a pan of water to the boil I cooked the spaghetti, as soon as it was almost cooked I used tongs to transfer the spaghetti to the pan of meatballs, ensuring I sloshed lots of the pasta water into the frying pan too. I added the lemon juice and courgette peels and tossed it all together. Finally serving with the lemon zest, parsley leaves and parmesan.
