So, with the kids off to their Mum's for a few days, it was time for this dad to let his hair down. Sadly not this week though. Work, housework and other stuff to catch up on…… I knew before I left for work, that I was going to be late home, so rummaged through the freezer and stumbled on some prawns I brought when on a yellow sticker at the supermarket, so got them out to defrost and trotted off to work. Simple summer prawns it was going to be.

After a manic day at work, this needed to be simple. Firstly I boiled the potatoes for about 10 minutes, Drained and mixed them with some dill and olive oil.
Dill, Baby New Potatoes, Olive Oil
Next, I chucked some butter and garlic into a wok, chopped a couple of green beans and chucked them in, sliced a fresh chilli and in that went, finally the prawns followed. Fried for a few minutes, plonking some basil leaves in just before serving.15 minutes, a quick rummage in the fridge and freezer and a yummy little dinner for one.
