Greek Pork Kebabs - Pork Souvlaki with Greek salad and rice
With the six-monthly family visit to the dentist after school today I needed something fairly quick and easy to cook on our return. I already had the pork from a yellow sticker haul last week. So grabbed that out of the freezer this morning. These Greek pork kebabs can be cooked on a BBQ but the weather isn't quite there yet, so I used the grill in the oven instead today.

Greek Pork Souvlaki
I plonked a little of the oil in a pan and softened the onions, before adding them to the rice with a little weak vegetable stock mix and cooking it in the rice cooker.
Then I mixed 2 tbsp oil, garlic, lemon zest and juice with 1 tsp of oregano and lots of black pepper in a bowl, before chucking the pork in and giving it a good mix. Leave these marinading, while you make the salad. When ready, thread the pork onto the skewers and grill for about 4 minutes on each side.
I added the red onion, cucumber and tomatoes to a bowl and then added a small amount of lemon juice, the red wine vinegar and a small amount of oregano and the remaining oil and gave it a good mix before crumbling the feta cheese over the top.
