I need quick and simple for tonight's dinner, we had loads going on and lot's of homework to catch up on. This dish certainly didn't fail us. Simple and bursting with Mediterranean flavours.
I simply chucked the first four ingredients into a roasting dish and plonked it in a pre-heated (200-degree) oven. I then fried the chicken in a small amount of oil, until it was browned and almost cooked through and then added it to the tray, with the stock, tomatoes and olives for the last ten minutes of cooking.
Once cooked I scattered with basil and served.
It really doesn't get much easier than this. Leaving me more time with the kids.
