Another perfect midweek masterpiece type recipe. This Greek feta traybake recipe is quick, easy and delicious. The cost came in at well under £5.00 to serve all four of us and I actually had most of the ingredients in the house already.
It is full of vibrant colours and looked amazing on the plate when served. If you do have any leftovers, it makes can be eaten cold the next day for lunch.

You want quick and easy and it doesn't get much easier than this!
Cut the pitta bread into triangle (ish) chunks, place them on a baking tray and drizzle with around 1tsp of oil. Sprinkle about 1tsp of oregano over, together with some black pepper before giving them a shake to mix. Bake them in a preheated oven at 220c/200c fan/gas 7 for around 10 minutes. Once cooked, set them aside.
4 Large Pitta Bread, 2 tsp Dried Oregano
Add the onion and courgettes to the tray, pour the remaining oil and scatter the remaining oregano over before cooking for 10 minutes
Chuck in the tomatoes, feta and olives and roast for another 10 minutes until the vegetables are soft and the feta is turning golden in colour. Scatter the pitta over the top and around the sides. Squeeze the lemon over the top before serving.
