The little lady decided for her Egyptian Topic Homework this week she would make cupcakes, with little pyramids on top. Not to be outdone. The middle boy, in turn, wanted to make some cupcakes of his own. One thing led to another and we now have enough cupcakes to feed a small army.
We took the butter out of the fridge to soften for about half an hour before mixing the butter and sugar in a large bowl until it was a fluffy texture.
We don't actually own an Electric Mixer, so used a wooden spoon.
We then cracked and mixed in two eggs, together with a pinch of salt and the vanilla essence
Finally, we added the self-raising flour and mixed it until smooth.
After adding the mixture into 12 cupcake holders we placed them in a preheated oven (180 degrees) for 15 minutes.
After they had cooled on a wire rack we set about decorating the tops. For speed and convenience, I had pre-purchased some pre-made buttercream and icing so we used this to decorate. We also decided to leave some plain. By the fourth batch, we had run out of butter, so simply used margarine instead. The results were the same taste-wise.
