Strawberry Sorbet

Instructions
In a medium saucepan, combine sugar and water. Heat over medium heat, stirring until sugar is dissolved.
Add strawberries to the sugar syrup and cook over medium heat for 10-15 minutes or until the strawberries are soft and tender.
Remove the pan from heat and let it cool for 10 minutes.
Once the mixture is cool, blend it in a food processor or blender until it's smooth.
Strain the mixture through a fine-mesh strainer into a clean bowl.
Add in the lemon juice and stir to combine.
Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
Transfer the sorbet to a freezer-safe container and freeze for at least 4 hours or until it's firm enough to scoop.
