I have been wanting to try tofu for ages now. Then I got thinking about going the whole hog and make a tofu dish, but ensuring it was vegan too. Nothing like jumping in the deep end! As it turns out it wasn't to difficult, it was created with good reviews too.

Ingredients
300gFirm Tofu, drained and cubed
2tbspSoy sauce
300gVegetables (I used a packet of stir fry veg, with broccoli, mini sweetcorn, sugar snap peas)
1Clove Garlic, thinly sliced
Small piece of ginger, peeled and grated
250gWholewheat Noodles
1tbspSesame seed
1tbspSesame oil, plus a drizzle more to serve
Instructions
I started by cooking the noodles as per the pack instructions. Once cooked, I drained and left.
Whilst the noodles were draining, I drained and cut the tofu and plonked in a bowl with soy sauce and half the oil. I then heated the remainder of the oil in a wok. I chucked the vegetables, ginger and garlic in and stir-fried for a couple of minutes. I then added a couple of tablespoons of water and stir-fried for another minute.
At this point, I added the noodles, sesame seeds and the soy sauce from the tofu to the stir-fry. A couple of minutes later I added the tofu. I then simple covered the wok with tin foil and let the tofu warm through for a few minutes. Finally I carefully mixed the tofu with the noodles before serving with a drizzle of sesame oil over the top.
