Easy Noodle Soup - This is a one of my go to recipes. Its quick, healthy and super easy. I normally have everything in stock too. The flavours can be adjusted to suit any taste. Plus the whole process takes no time at all and creates very little washing up.

1Packet instant noodles
2Spring onions, sliced
1Handful coriander, roughly chopped
Optional Meat of choice
Soy Sauce (to taste)
Fish Sauce (to taste)
Sugar (to taste)
Chilli Flakes (to taste)

Easy Noodle Soup
If you are using meat make sure you pre cook it first. This dish works well with chicken, steak, duck etc.
I make the noodles according to pack instructions in a large bowl. Whilst they are cooking, I prepare the spring onions and coriander. I then slice the meat.
Then simply, add soy, fish sauce, sugar and chilli flakes to taste. I often add fresh chili too. I normally use, approx, 1 tbsp soy, 1 tsp fish sauce, a good tsp of chilli flakes and a 1tsp of sugar.
Once I get the flavour right. I chuck in the spring onions, coriander and meat. Hey presto! A simple yet delicious noodle soup.
