First things first, I got the kids to wash their hands and we squeezed all the meat out of the sausages and rolled them into little meatballs, we got about 4 from each sausage. I then shallow fried them in the frying pan until they started to go golden brown in colour. Once done we put them on a plate and set them aside.
Next up, I fried the onion to soften. I then got one of the kids to chuck in the fennel, oregano & chilli. A couple of minutes later we poured in the passata, tomatoes and sugar. I then turned the heat down and let it simmer for about 40 minutes until the sauce thickens.
Meanwhile we needed to make the white sauce. So we melted the butter in a pan and chucked in the flour to make a roux, slowly we added the milk, bit my bit while whisking continually. The middle one then, grated the nutmeg in to the sauce.
The Messy Bit of the Lasagne Recipe
Now the fun and somewhat messy bit. We grabbed the big oven dish from the cupboard and began the layering process..Keeping about 10 meatballs aside, the little lady splashed the rest in to the tomato sauce. We then poured half of the meatball and sauce into the oven dish. The middle one topped it with half the spinach and I added half the basil, together with a little bit of the parmesan. We then poured about a third of the white sauce over it all. We then all plonked layer of lasagne sheets. Finally, another layer of lasagne sheets followed by the remaining white sauce. To finish off we added the cheddar, remaining parmesan, mozzarella and the remaining meatballs, before chucking in the oven for about 40-50 minutes at 180. Giving me plenty of time to clear up the mess and find time to play a little bit of Fortnite with the eldest (I came 5th in the game if you're interested? Personally I think that's good. But apparently, if you listen to the eldest it wasn't because all I did was hide until the end and then get killed).

Luckily this was enough to serve six because everyone wanted a second helping. Also, you will have to take my word for it coming in under a fiver because it was actually made during the summer holidays and I have no idea where I wrote down the price and shopping list.
