A nice and easy one tonight. We have a few extras in the house today, with everyone trying to cram the most into the remaining few days of the school holidays. Being completely honest i have no idea how much this cost as I already most of the ingredients in and all I needed to buy was the pineapple chunks and sugar snap peas. I originally saw this recipe on the BBC food website and adapted it slightly to suit our ingredients and taste.

Pork Fillets
Rice
Snap Peas (half a bag, roughly cut)
1Onion, roughly cut
2Red Peppers, roughly chopped
1Tin of pinapple chunks, drained
9tbspTomato Ketchup
3tbspMalt Vinegar
4tbspBrown Sugar
Instructions
Firstly I cooked the rice in the rice cooker, knowing this will keep it warm after cooking. Then (after a quick drive to pick up an extra PS4 controller from someone’s house, because apparently life isn’t worth living unless more than two boys can play at once), I chopped the pork into rough cubes and chucked it into the wok with the garlic and cooked for a few minute, then I stirred in the ketchup, onion, peppers, vinegar and sugar and cooked through for about another five or six minutes. Finally I chucked in the peas and pineapple. Cooking for another few minutes before serving.
This was a super easy, sweet and sour dish that can be easily adapted to suit your family from what you already have in the fridge and freezer.
