With Christmas just around the corner, we decided to make some gifts for the little lady's teachers this year. This was part one of the gift and part two can be found HERE. Homemade gifts are always nice to receive and these Peppermint Creams are not only delicious, but they are also simple to make. Who wouldn't want to receive such a thoughtful homemade gift?

1Egg White
0.5Lemon (1/2 a lemon)
400gIcing Sugar
0.5tspPeppermint Extract

Lightly beat the egg white in a bowl until it starts to foam, before adding a squeeze of lemon juice.
Sieve the icing sugar into the bowl and give a good mix with a wooden spoon. As soon as it gets too difficult to mix with the spoon, start using your hands.
Gentle dust the work surface before, transferring the mixture and roll it out until it is about 2cm thick
We used a small cookie cutter (2-3cm) to cut the individual peppermint creams. before placing them on a dusted chopping board to dry out
We then (along with part 2) wrapped them into little parcels and put them into small presentation gift boxes.
