Sometimes you need something quick and easy for your mid-week meals and this Chicken Satay recipe fits the bill well. Served with sticky rice and a cucumber salad, turns a traditional snack into an evening meal rather nicely.

Being unusually organised, I remembered to get the chicken breast out of the freezer in the morning, allowing them to be thoroughly defrosted by early evening.

It may appear to be a large list of ingredients. However a lot of it you may already have in the cupboard. It came in at just over £5 but did make enough for my lunch the next day.

After seeing some Sea Bass fillets on the yellow sticker shelve after work today, I grabbed a pack because it would do me for two nights because the kids are at their Mums tonight.

I have listed the ingredients to serve two, but could easily be doubled for four people.

With my original meal plan going out of the window today and with the help of the BBC good food guide I settled on this little one pot dish instead. With a park play date, school production rehearsal and a lazy pre-teen refusing to walk or ride to school this week I needed something fairly simple. I knew I had some chicken in the freezer and Thai green paste left from another recipe, so this is where I ended up. One pot – two steps – three feed children and a happy daddy!
