This Thai chicken recipe was a real crowd pleaser with the kids. It was really easy to prepare and because I would using the slow cooker it just cooked itself.
It was great to be able to chuck some stuff in the slow cooker and not have to worry about cooking in the evening. Which has also meant that we have got to enjoy the school holiday to the max.
I simple added the coconut milk, peanut butter, soy sauce, honey, vinegar, ginger and garlic to the slow cooker and gave a good mix, before adding the chicken. I then cooked this on low for 4-5 hours
With half an hour to go before it being ready I added the lime juice and the cornflour (mixed with equal amounts of water) to thicken the sauce.
Finally, I served it over some rice and chucked a little coriander over the lot to garnish.
