With it being the school holidays we spent the day exploring the South Downs. Muddy paths, giant mud puddles and chalk cliffs. With the kids taking it in turns showering, changing and generally winding down, I needed something quick and filling.
I started by unrolling the pastry and cutting it in half lengthways to form 2 long pieces of pastry.
I then simply split the sausage meat into two bits and rolled and squeezed it to form two long sausage shapes and placed them onto the pastry. I then rolled the pastry and pressed down on the ends to join together.
I brushed the sausage rolls with the egg and then cooked them at 180 degrees for 15-20 minutes.
I served this with some homemade potato wedges and a side salad with a caesar dressing
The sausage roll could also be cut up into little sausage rolls and used for a delicious snack.
