I got the inspiration for this because I saw a large bag of stir fry mix going cheap at the supermarket and thought why not!
I chucked the veg in to a big bowl with the glug of soy and glug of sweet chili and mixed it all together.
Grabbing a sheet of the pastry and a handful of the veg mix i rolled once over to form a sausage shape, I folded in the sides and carried on rolling.
I heated some oil in a wok and when hot I cooked them two at a time until golden brown in colour. finally i let them cool down on a few sheets of kitchen paper.
15 minutes later i had 15 jumbo spring rolls ready to feed the kids and their mates……. all in costing about £1.35. Happy kids, happy days.
