One Pot Chicken and Potato Bake

After a bumper haul of yellow sticker bargains the other day, I grabbed some chicken drumsticks out of the freezer before the morning school run, in readiness for tonight's dinner.

 10 Chicken Drumsticks (£1.24)
 3 Red onions, chopped into quarters (31p)
 2 Peppers, roughly chopped (60p)
 400 g Small baby potatoes, halved (50p)
 2 tbsp Olive Oil, (5p)
 2 tsp Herbes de Provence (or mixed herbs will do), pennies.
 250 g Cherry Tomatoes (57p)

This is a great dinner for any busy parent. It is cheap, healthy and really easy to make. Plus it is delicious.

I simple mixed all of the ingredients, except for the tomatoes, in a big bowl. I then Chucked the lot in a roasting tray and spread it out and chucked it into a preheated oven (180) for 45 minutes.

After 30 minutes cooking, I added the tomatoes and chucked it back in to the oven for the last 15 minutes

After serving it on to the plates I simply drizzled some of the cooking juices over the top.

Oh, there was enough chicken left for me to have for lunch the next day too.
