So, the kids are away with their Mum for a few days, finally giving me a chance to catch up with the housework and work.

If I get another phone call about accepting the game request from the App Store or asking for more data I’m going either scream or sit in the corner shaking………

Anyway, ignore my ramblings…….

This gingered chicken burgers recipe we had the day before they left. Easy, quick and very popular, so we will have it again I’m sure. I did have a lot of this in the cupboard and only needed to buy the Chicken, also I have lost the receipt. So you will have to take my word for the fact it came to less than a fiver!

Ingredients
  

  • 6 Boneless Chicken Thighs, chopped into chunks
  • 3 Cloves Garlic, roughly chopped
  • Thumb size bit of Ginger, roughly chopped
  • 4 Spring Onions, roughly chopped
  • A handful Coriander, chopped
  • 2 tbsp Fish Sauce
  • 300 g Noodles
  • 3 tbsp Sunflower Oil
  • Half a head of Broccoli, chopped
  • 1 Carrot, chopped
  • A handful of fine green beans, trimmed
  • 0.5 tbsp Soy Sauce

Instructions
 

  • I am now the proud owner of a food processor and this would be the perfect meal to try it out. I chucked the garlic, ginger and spring onion in the food processor and blended until it was a texture of finely chopping it. I then added the chicken, coriander and fish sauce with some seasoning and whizzed it until it was mixed and it all looked minced together. With wet hands, I snapped this mixture into burger patties.
    6 Boneless Chicken Thighs, chopped into chunks, 3 Cloves Garlic, roughly chopped, Thumb size bit of Ginger, roughly chopped, 4 Spring Onions, roughly chopped, A handful Coriander, chopped, 2 tbsp Fish Sauce
  • I cooked the noodles according to the pack, whilst also heating the oil in a saucepan and cooking the chicken burgers for about 4/5 min's on each side. I then drained the noodles and left both to the side.
    300 g Noodles
  • I put the rest of the oil in a saucepan and heated it, I chucked the veg in with the soy sauce and cooked through for a couple of minutes. I then added the noodles and mixed and earned through. Finally serve the noodles with the burgers on the side. I had some Sweet Chilli Sauce which we used as a dip. Well, some of us did. The big boy decided at the same sweet chilli he had eaten early in the week wasn't the same and he wouldn't eat it!
    Half a head of Broccoli, chopped, 1 Carrot, chopped, 3 tbsp Sunflower Oil
