Easy Paella

We have visited Spain a few times as a family and the kids love it. Great food, great people and most of the time great weather. We have always come back wanting to eat more of the delicious Spanish food.

After our last visit in the summer, I came home with a Spanish Paella Dish, so keen to give it go. We were having a cheap and easy version of this amazing dish.

Easy Paella

 400 g Frozen Seafood Mix
 200 g Frozen Peas
 300 g Long Grain rice
 1 l Chicken/Fish Stock
 1 Onionsliced
 1 Chorizo Sausagechopped
 1 tsp Turmeric
 1 tbsp Oil

Although I used my new Paella dish, you could just use a wok or frying pan.

After heating the oil, chuck the onion in and soften for about 5 minutes, add the chorizo and fry off until it starts to release it's oils. Plonk in the turmeric and rice and stir through to coat all the grains. Add the stock and bring to the boil before simmering for about 15 minutes.

Chuck in the peas and seafood (defrosted) and cook for another 3-4 minutes or so, before serving.
