1 Sprig of rosemary (from garden), chopped
 1 Onion
 2 Cloves of garlic
 500 g Small potato, quartered
 8 Chicken drumsticks or thighs
 500 g Cherry tomato
 300 ml Chicken stock
 150 g Black olives
 Small bunch basil leaves

I simply chucked the first four ingredients into a roasting dish and plonked it in a pre-heated (200 degree) oven. I then fried the chicken in a small amount of oil, until it was browned and almost cooked through and then added it to the tray, with the stock, tomatoes and olives for the last ten minutes of cooking.

Once cooked I scattered with basil and served.
