Easy Chicken Satay with sticky rice and cucumber salad

Sometimes you need something quick and easy for your mid-week meals and this Chicken Satay recipe fits the bill well. Served with sticky rice and a cucumber salad, turns a traditional snack into an evening meal rather nicely.

Being unusually organised, I remembered to get the chicken breast out of the freezer in the morning, allowing them to be thoroughly defrosted by early evening.

It may appear to be a large list of ingredients. However a lot of it you may already have in the cupboard. It came in at just over £5 but did make enough for my lunch the next day.

If you want to jazz up you Sunday roast then check out these amazing and simple orange and ginger glazed carrots. This time I used some sweet baby carrots because they were on a yellow sticker and cheap. But you can use any variety of carrot for this recipe.

I am always looking at ways to get the kids happily eating more vegetables and this recipe didn't fail. It added a delicate extra flavour to the plate and all three of them asked for more. If you don't like ginger, you could always experiment with other flavours. We have cooked similar but used honey instead. I also plan to try to experiment with garlic in the future.

Another quick and easy meal from the BBC Good Food Magazine. This would make a great lunch, or as part of a dinner with other bits perhaps. I had everything for this dish except the lettuce, so really cheap for me. However, all in you shouldn’t be paying much more than £4 for this meal.
