How to get the kids eating greens!

Goma-ae greens

200g fine beans, trimmed

250g spinach 

For the sauce

4tbsp toasted sesame seeds

1tbsp soy sauce

1tbsp caster sugar

1tbsp white miso

1tbsp mirin

I managed to pick up the all the vegetables for less than £1 because both going out of date today and the sauce ingredients I already had at home. However, even at full price it would still be less than £2 all in!

Bring a pan of salted water to the boil and prepare a bowl of iced water ready.

Firstly, I chucked the beans into the boiling water for about 2 minutes. Then using a spoon with holes I removed them straight into the ice water. Next I did the same with the spinach. As soon as the veg had colder I poured them into a colander to drain the excess water. 

To make the sauce/dressing I firstly grinder the sesame seeds with a pestle and mortar (if you don’t have a pestle and mortar you could improvise with either a rolling pin or the side of a large knife and chopping board). I then chucked the rest of the sauce ingredients in with the sesame seeds and mixed together.

Finally I tossed the veg with the sauce and served as a side to a main dish. 

This could also be used as a snack, salad, part of a picnic or part of a selection of snacks…. happy days!
