OK, tonight’s dinner was never going to be healthy and it came in at around £6, not £5. But it was tasty and I figured we can all be unhealthy once in a while.

Ingredients

For the wings

  • 1 Pack of chicken wings
  • Veggie Oil for frying
  • 85 g Plain Flour
  • 2 tsp Celery Salt
  • 1 tsp Paprika
  • 50 g Unsalted Butter
  • 5 tbsp Chilli Sauce (hot sauce)
  • 2 tbsp White wine vinegar
  • 4 tbsp Clear honey

For the Slaw

  • 1/2 White Cabbage, thinly shredded
  • 2 Carrots, cut into matchsticks or grated
  • 3 Celery Sticks, finely sliced
  • 1/2 Red onion, finely sliced
  • 150 g Gorgonzola
  • 100 ml Sour Cream
  • 100 g Mayonaise
  • 3 tbsp White wine vinegar

For the chips

  • 3 Potatoes, chopped into chip shapes

Instructions

  • After a slow amble home from school in the sunshine, I decided to make the coleslaw straight away and put it in the fridge until later. I put the cabbage, carrots, celery and onion in a bowl and then mixed the blue cheese, cream, mayo and vinegar with a hand blender. I mixed the lot together, covered and chucked it in the fridge.
  • I then prepared the seasoning for the chicken by mixing the flour, celery salt, and paprika together in a large bowl.
  • Mondays are Brownie night, so after much nagging and negotiating we (I say us, but really mean just the princess) were finally in our brownie uniform and on our way to picking up the princesses' brownie mates. 15 minutes later I was home again and fended off the starving boys I headed back to the kitchen. I grabbed the wok and filled it with the oil and started to heat it up, I put the oven on low heat to keep the chicken warm after cooking and chopped the potatoes into chip (ish) shapes. I then put all the chicken in the bowl with the seasoning and tossed it all together.
  • My wok could only cook three wings at a time, each batch took about 10 min’s to cook and once cooked I drained them on kitchen paper and then put them on an oven tray in the oven.
  • The middle one and I like it spicy, so I added the butter, chilli sauce, vinegar and honey to a saucepan and melted on low heat, stirring to avoid burning. This was tossed with half the chicken before serving
  • Finally, at the end, I chucked the potatoes in the oil and fried them until cooked (I did warn you it was an unhealthy night).
