Chicken Hotpot (Dad's Delicious Leftover Surprise)

Chicken Hotpot - We had a little of our Sunday roast leftover from yesterday (yes, I know it was Monday, but thats how we roll around here)! So after a little rummage around the kitchen all I needed to buy was an onion. So, for 11p I made a delicious home cooked meal for everyone, with the boys going back for a second helping too (my lunch tomorrow)! If you had to buy all the ingredients it would still come in between £1.50 and £2.00! Super cheap and home cooked fresh food. Happy days. Plus it was quick and easy as well!

Ingredients
  

Chicken Hotpot

  • Left over chicken, cut into strips (about 1/4 of a large roast chicken)
  • 4 Leftover roast potatoes
  • Leftover stuffing, chopped
  • 2 Carrots, chopped
  • 3 Potatoes
  • 1 Onion, chopped
  • 1 Handful frozen peas
  • 1 handful frozen sweetcorn
  • 50 g Unsalted butter, plus extra for greasing and brushing
  • 50 g Plain flour
  • Nutmeg
  • 1 tsp Dijon mustard
  • 500 g Chicken Stock (from cube)

  • I promised quick, cheap and easy, so here goes....... Chuck the onion and carrots into the melted butter to soften them for a few minutes, then stir in the flour. This will, join up with the butter and form whats called a roux, cook this through for a couple of minutes (whilst stirring). Then take of the heat.

  • Slowly pour the stock in bit by bit and continually stirring. This will turn it in to a nice thick sauce. Next, chuck the chicken, left over potatoes, peas, sweetcorn, left over stuffing, a grater of nutmeg and the dijon mustard, together with a bit of salt and pepper. Give it a good mix and put it back on the heat and warm through whilst stirring for a few minutes or so.
  • Finally, pour the mixture into a greased oven dish and place the sliced potatoes over the top, overlapping them slightly, brush over some melted butter and chuck the lot into a pre heated (180) oven for 35 minutes. The potatoes will start turning a golden brown colour. Job done!
