Ingredients
  

  • 1 kg Pork Belly
  • 3 Eggs
  • 3 tbsp Soy Sauce
  • 1 tbsp Fish Sauce
  • 2 tbsp BBQ Sauce
  • 1 tbsp Clear Honey
  • 2 tbsp Ketchup
  • 0.5 tbsp Sugar
  • 1 pinch Salt & Pepper

Instructions
 

  • For the marinade. I grabbed a bowl and fork. I squirted a large dollop of shop brand BBQ sauce, a big splash of soy sauce, about a tablespoon of honey and a little dollop of tomato ketchup and then mixed them together. I placed one pack of the belly pork into a small roasting tray and poured the marinade over and left it for half an hour or so. The other pack I seasoned with salt and pepper and a small amount of oil. I then chucked them in a preheated oven at 180 degrees for 35 minutes. Once cooked I cut them into small bite-size bits and served them on separate plates for the kids to help themselves. I poured the BBQ sauce into a bowl to be used as a dipping sauce.

  • For the omelette son number two mixed three eggs with a big splash of soy sauce together with a small splash of fish sauce, a teaspoon of sugar and a finely chopped shallot he found in the fridge (spring onion works well. He then pours half the amount into a hot frying pan with a splash of oil and fry each side of the omelette until golden brown. With the other half, he added some fresh chilli and chilli flakes and did the same. Just for reference, there was enough pork and rice left for a packedlunch or two for tomorrow and enough pork after that for another meal! So that will be frozen until needed.
