Ingredients
- Beef Diced £1.80 (yellow sticker)
- Baby Leeks 90p
- 4 Eggs 50p
- 300 g Sushi Rice 80p
- 2 1/2 tbsp White miso
- 1 tbsp Rice Vinegar
- 1/2 tbsp Mirin
- 1 tbsp Honey
- 1/2 tbsp Dijon Mustard (miso, vinegar,mirin,honey & mustard less than 75p)

Instructions
- Cook the rice as per instructions on pack, but from memory I added about a mug of water, covered and brought to the boil, simmered for ten minutes and turned off heat. Then left covered for 20 minutes.
- Trim the leeks and cut them into 3cm chunks and then steam for about 10 minutes, meanwhile I mixed the mustard, miso,vinegar, mirin and honey and seasoned with pepper.
- I pan fried the beef until cooked and boiled the eggs for about 7 minutes and left to cool in cold water.
- To finish I mixed the leeks, beef and dressing together and served on rice with the egg cut in half.
