Beef with Leeks, Miso Dressing and eggs, served with Japanese Sticky Rice

Cook the rice as per instructions on pack, but from memory I added about a mug of water, covered and brought to the boil, simmered for ten minutes and turned off heat. Then left covered for 20 minutes.

Trim the leeks and cut them into 3cm chunks and then steam for about 10 minutes, meanwhile I mixed the mustard, miso,vinegar, mirin and honey and seasoned with pepper.

I pan fried the beef until cooked and boiled the eggs for about 7 minutes and left to cool in cold water.

to finish I mixed the leeks, beef and dressing together and served on rice with the egg cut in half.

  • Baby Leeks – 90p
  • 21/2 tbsp white miso, 1 tbsp rice vinegar, 1/2 tbsp mirin, 1 tbsp honey, 1/2tbsp dijon mustard, less than 75p
  • 4 eggs, 50p
  • 300g Sushi Rice, 80p
